Isomaltulose (Palatinose) is an isomeric disaccharide sugar. It means that with the same chemical composition as sucrose, the links between the glucose and fructose molecules are different. It seems that the bee saliva exerts on sugars the same type of chemical modification. The result is an advantage for animals that are not genetically designed to eat sugar, like horses.
Glucose when arriving in the blood stream triggers the production of insulin, the hormone responsible for good regulation of the glucose plasma level. A rapid or high increase of this level will be followed by a corresponding insulin peak. In consequence hypoglycaemia will occur at short term. By cumulative effect, this phenomenon will produce an insulin resistance, source of deleterious metabolism disorders.
Isomaltulose (Palatinose) alleviates these potential problems because it is digested by the same enzymes that should digest the sugars contained in the ration. This process being time consuming, it prevents most of the digestion of those feed contained sugars (competition effect).
