Polyphenols are a large family of natural antioxidants, containing, among others, flavonoids, anthocyanins, quercetins, ... as well as many groups of tannins that give bitterness and red colour to some fruits and vegetables. Their role is mainly antioxidant, helping to guarantee the homeostasis of the body to fight metabolic stress.
